Abstract

The consumption of Unconventional Food Plants (PANC) represents a relevant nutritional alternative, yet it is still poorly incorporated into the dietary habits of the Brazilian population. This study aimed to evaluate the knowledge, interest, and consumption patterns of caruru (Amaranthus spp.) among residents of the state of Rio de Janeiro. This is a qualitative-quantitative study, conducted with 120 participants, using an online questionnaire containing sociodemographic questions and items focused on plant identification, nutritional perception, consumption methods, and intention to use. The results indicated that, although some respondents demonstrated prior knowledge about PANCs, the consumption of caruru remains limited and poorly incorporated into their dietary routine. It was also observed that, even among individuals who have never consumed the plant, there is a high level of interest in trying it, highlighting the potential for expanding its use when there is access to adequate information and guidance. It is concluded that amaranth has strategic value for food diversification and for nutritional education actions, reinforcing the importance of initiatives that bring the population closer to the safe and daily use of PANCs.
