Eggs are a widely consumed food, rich in proteins and nutrients; however, contamination by Salmonella spp. poses a public health risk. This study aims to review the mechanisms of egg contamination by Salmonella, focusing on vertical and horizontal routes of infection in eggs. Studies that address the conditions favoring these contaminations, including handling and storage practices, were analyzed. Preventive measures such as poultry vaccination, sanitary control, and good handling practices are highlighted as fundamental to reducing the spread of Salmonella in farms.
