This study seeks to highlight the problems related to hygienic and sanitary issues found in meat markets on the Discovery Coast, as meat, when exposed, becomes vulnerable to pathogens, generating possible harm to human beings. It is noticeable that the meat sold in these environments is widely consumed by the local population. In view of this, the following question arose: Can the consumption of meat sold inappropriately cause health problems for humans? Thus, the research in question is justified by the need to alert the community to the possible risks arising from the ingestion of contaminated meat, with the general objective of analyzing the impact of municipal meat markets on human health generated by the lack of sanitary hygiene, given that the specific objectives are aimed at identifying the sanitary conditions present; analyze the impacts of pathologies transmitted by the consumption of contaminated meat; and compare them with the standards and regulations established by the competent authorities. This research will be carried out using bibliographic and documentary methodologies through literary reviews. This study intends to identify the general population's perception of the lack of adequate hygiene for products of animal origin and subsequently the correct applications of good sanitary hygienic practices in force in Brazil, thus clarifying food safety.
