Abstract

Regarding food safety in hospitals and the risk of microbial contamination, it is clear that food requires greater care, since errors in food handling and storage (pre-preparation, preparation, distribution) can lead to contagion. The general objective of this work is to determine the importance of hygiene and food safety in hospital kitchens. Methodologically, it is a descriptive qualitative approach characterized by documentary research. However, contamination is determined by the presence or absence of foreign agents in food, as these foods can cause various damages to human health and the hospital economy, which is why contaminated food requires special care.
