Abstract

Brazil has a rich biodiversity, with approximately 5,000 plant species eligible for consumption, among which Unconventional Food Plants (UFPs) stand out. Ora-pro-nobis (Pereskia aculeata), popularly known as "poor man's meat," is a UFP widely distributed throughout Brazilian territory and recognized for its high nutritional value. This study aimed to conduct a literature review on the origin, composition, uses, and properties of ora-pro-nobis, as well as to survey applications already evaluated in food products, aiming to inspire its better utilization by the industry. A literature review was conducted in the Google Scholar and CapesCafe databases, using the descriptors "unconventional food plants," "non conventional food plants," "Pereskia aculeata," and their variants, with a time frame from 2017 to 2021. After applying filters and excluding duplicate articles or those focusing exclusively on social and medicinal studies, the works that underpin this review were selected. Ora-pro-nobis presents high protein content (22-29%), soluble fibers, minerals such as calcium, iron, magnesium, and selenium, in addition to bioactive compounds. Studies demonstrate its application in hamburgers, pasta, cakes, ice cream, and beverages, with a positive impact on the nutritional profile, although sensory challenges must be considered. Ora-pro-nobis has great potential as a functional ingredient and vegetable protein source. Its use in food products is still underexplored industrially, indicating opportunities for the development of new products that value Brazilian biodiversity and meet the growing demand for healthy and sustainable foods.
