This study addresses the challenges faced by vendors regarding food hygiene at Brazilian open-air markets, considering the importance of these spaces for food supply, the local economy, and cultural preservation. In this context, the research problem focuses on understanding the main critical factors vendors face regarding food hygiene at these markets and how these difficulties compromise food safety and public health. The general objective was to analyze challenges related to hygienic-sanitary conditions at open-air markets, identifying structural, social, and sanitary factors that directly affect food sales. Specific objectives included discussing the relevance of good handling practices, understanding the impact of structural inadequacies in these environments, and presenting educational strategies aimed at improving sanitary conditions. The methodology employed was a qualitative, exploratory, and descriptive literature review, conducted through the analysis of scientific articles, sanitary regulations, dissertations, and institutional documents related to the topic. The results revealed that many Brazilian open-air markets suffer from a lack of access to potable water, inadequate utensil sanitation, improper food display, and a lack of vendor training on good handling practices. Furthermore, the study found that insufficient sanitary oversight and structural deficiencies facilitate food contamination and increase the risk of foodborne illnesses. It is concluded that educational initiatives, continuous oversight, and infrastructure investments are essential to ensuring greater food safety and protecting public health.
