Abstract

Although Brazil currently holds the top spot in the global beef exporter ranking, the country still faces hurdles regarding the commodity's logistics and the assurance of sanitary quality for the importing market. The most significant difficulties are found in the logistical infrastructure, which is often unsuitable for routes and consequently affects the merchandise's transport time, as well as the time beef cuts spend in port, since they must remain at extremely low temperatures throughout the entire process to ensure the wholesomeness of the perishable goods for the final consumer. In summary, this article analyzes the applicability of AI compatible with each phase that comprises the beef export chain, and concludes that investment in technology in this field translates into the optimization of process stages, consequently speeding up delivery time to the purchaser. As a recommendation for future studies, we suggest delving deeper into the legislative and regulatory issues that need to be adapted so that data generated by AI may be considered by regulatory agencies in dealings directly related to the meat's soundness.
