QUALITY CONTROL OF THE MEALS SERVED IN THE SAPUCAÍ VIP BOXES 2025

The Carnival of the city of Rio de Janeiro brings together thousands of people and requires a complex service structure, including meal provision. The objective was to evaluate the food safety of the meals served in two VIP boxes (A and B) during the six days of Carnival 2025, through the application of a checklist based on RDC 216/2004 (ANVISA). Data analysis allowed for comparison of the degree of compliance and non-compliance in food services. A total of 52 items were evaluated daily. In VIP Box A, the highest compliance scores were observed in equipment, furniture, and utensils (86.1%), and cleaning and disinfection (79.6%), while the lowest compliance was found in collective environment (45%) and ventilation and lighting (41.2%), reflecting the physical limitations and reduced production space. VIP Box B showed high compliance levels in the evaluated items, highlighting that an organized structure and prior planning favor adherence to Good Practices. The best evaluations were in ventilation and lighting, water supply, waste disposal, and collective environment (100% compliance). Only food handling (12.5%) and production flow (20%) showed non-compliance. The results highlight the importance of hygienic-sanitary control and constant monitoring in temporary structures, contributing to the improvement of food safety in large-scale events.
