Waterborne and Foodborne Diseases (WFDs) represent a public health issue in Brazil, driven by the consumption of contaminated food and water. This study aimed to present data and information of the main microorganisms responsible for WFDs, as well to point out the importance of good practices during the handling, preparation, and storage of food. Through a narrative literature review, it was observed that Escherichia coli, Staphylococcus spp., Salmonella spp., and Bacillus cereus were the microorganisms most frequently responsible for foodborne outbreaks in Brazil in recent years. Research has shown that poor hygiene and improper food handling, both at home and in food service establishments, significantly contributed to these outbreaks. The implementation and training in good hygiene practices, along with inspection and health education, are essential to reducing the incidence of these diseases and ensuring food safety.
