Abstract

The milk and dairy products market is expanding, with growing demand for novelty, safety and quantity. Consumers, in turn, play an important role, as they are more participative and informed about the food they consume, prioritizing healthier, quality products and companies committed to preserving natural resources and the environment. Therefore, the implementation of new technologies, such as genetic improvement and artificial intelligence, are essential to increase productivity in the field and in industry, covering the entire dairy production chain. However, there is a need to balance this scenario with environmental issues, which are also crucial, requiring the promotion of sustainability, the reduction of gas emissions, the adequate disposal of waste and the preservation of the soil. This work aims to present new technologies, emerging in the milk and dairy products production chain, and the challenges to promote innovations, balancing the increase in production with consumer demands.
