Abstract

The article consists of exploratory research whose theme is the emergence and evolution of technology linked to gastronomy and the importance of maintaining machines and utensils used in the production of culinary preparations. The problem revolves around the following question: How can the lack of maintenance of equipment in the FACISA kitchen laboratory affect the final result of the recipes? The general objective of the research is: To analyze how the lack of maintenance of equipment in the FACISA kitchen laboratory can affect the final result of recipes. The specific objectives are presented below: contextualize Gastronomy and the advent of new technologies aimed at culinary equipment; Then, understand the role of the gastronomy professional in the maintenance and safety of equipment used for culinary purposes; finally, present viable solutions in an efficient and effective way for the maintenance of equipment used for culinary purposes in the FACISA kitchen laboratory, in order to maintain the quality of products and the safety of students and teachers, solving the problem and contributing to the achievement recipes correctly and work safely. The methodology used to carry out this article is of a bibliographic and documentary nature, with a set of scientific articles, texts, books, documents, files and materials, and additionally a case study carried out in the FACISA kitchen laboratory, using as an example the Confectionery discipline. The article thus concludes the objective of informing Gastronomy students and teachers, as well as those who already follow the gastronome/gastrologist profession, about the importance of maintaining the quality and standardization of the equipment used in the manipulation and preparation of recipes, the in order to help maintain the level and quality of your preparations and the safety of both the individual and the employees around you.
