Due to the great competition existing in the retail market, good management in companies is essential, and especially regarding inventories. In order to keep the company always alive in the market and mainly competing at a high level. This article will have as general objective to descriptively analyze the stock management processes of Sorveteria Nosso Sabor. Company operating in the food retail segment. Analyzing the enterprise in order to respond to the general objective and specific objectives, and find an answer to the research problem. The methodological procedures used will be: Inductive method; Exploratory, applied and bibliographical research; Structured interview; Simple observation; Qualitative analysis. Due to the first specific objective, it will seek, through research in books and articles, the correct theoretical basis for the foundation of the theme, and thus build the literature review. The literature review will address the following subjects: Organization, stocks and information technology. The second specific objective will be carrying out an organizational diagnosis with questions that will raise answers for all aspects of the organization, originating the characterization of the company. The third specific objective will be answered by carrying out an interview script with the manager and attendant of store one, in addition to the simple observation technique. The fourth specific objective will be to identify the conflict points of the current inventory management. The fifth specific objective will consist of proposing suggestions for improvements in the organization. The general objective will be achieved by answering the four specific objectives. The research question will be answered based on the resolution of all objectives. After these procedures, the researcher will complete the work.
