Livestock plays an essential role in agricultural and economic development, as well as food security. Public concern about the safety of animal foods has increased due to issues that have arisen from outbreaks of foodborne illnesses and chemical contamination (pesticides, heavy metals, dioxins), as well as growing concerns about veterinary drug residues and microbial resistance to antibiotics, in such a way on this topic it becomes relevant and justifiable in the scientific environment. These problems have drawn attention to production practices within the livestock industry and have led health professionals and the food industry to closely examine the quality and safety issues that can arise in animal foods, and this has also occurred to the veterinary professional. Which has done essential work for communities. In addition to national food security, these issues have serious foundations for the international trade of livestock products and animal feed, so the problem question that guides this article is: What is the importance of the veterinarian in the control of agricultural food, both in Brazilian cities and for the emerging international market? The hypothesis about this question is obvious: Essential since today the country is one of the many exporters of beef, which requires extreme attention and care. In view of these points, it is important to emphasize that the content investigated here is a bibliographic study of a deductive qualitative nature.
