The safety of the oral health of individuals and communities is influenced by the knowledge and understanding of the processes involved in the development of dental caries, which, over time, has been conceptualized under different perspectives. In general, we find that it is a chronic, multifactorial disease that is greatly affected by socioeconomic conditions. When established, it provides pain and suffering that impact the quality of life of affected individuals. Numerous researches and studies prove the importance of the dietary pattern in the process of its development. The condition of overweight or obesity, determined by diets rich in fat and sugar, increases the possibility of developing tooth decay. On the other hand, malnutrition, perceived by the reduction in anthropometric measurements for age, leads to greater severity of injuries. The research is justified by the relevance of the topic, it adds specific knowledge in the scientific training of dentists, contributing to greater effectiveness of their professional action. The narrative review of the bibliography is based on articles published in the last 05 years, which aims to present the recent discussion on nutrition in the context of oral health, highlighting the role of sucrose.
