This paper aims to highlight the importance that the fish processing industry has shown in recent years, and its implications for worker health. Both in Brazil and in the world, the vigorous growth of aquaculture and the consequent strengthening of the fish meat processing sector is accompanied by the demand for workforce that is exposed to the inherent risks of this type of industry. The occupational risks of this activity include musculoskeletal injuries resulting from work, exposure to ammonia from the cold room refrigeration system, accidents with blades resulting from fish filleting activity and the risk of exposure to cold environments. As part of the attempt to protect workers' health, the NR-36 regulatory standard ratifies the measures to be implemented by the meat processing industry to improve the work environment and promote worker health. This article deals with the analysis of these risks and draws the attention of the medical community to the importance of worker protection actions in this industry segment.
