Abstract

This article aimed to perform a microbiological analysis of Colossoma macropomum fish sold in Cacoal, Rondônia. Regarding the methodology, the research was initially conducted through a literature review with a qualitative-quantitative approach, to evaluate a laboratory analysis for detecting the presence of coagulase-positive Staphylococcus, Salmonella spp., and Escherichia coli, using a descriptive-exploratory design. In the second stage, a visual assessment was carried out with visits to three establishments in the municipality of Cacoal. The analyses were performed at ENGECON - a food and water laboratory in the municipality of Ariquemes, RO, and were executed according to the guidelines of Collegiate Board Resolution (RDC) No. 12/2001, using 3 samples of gut-developed Tambaqui (MB) collected from commercial establishments. The results demonstrated that in 100% of the coagulase-positive Staphylococcus samples, there were < 1.0 × 10¹, while in 100% of the Salmonella spp. samples, the analyses showed a negative result for the presence of this bacterium. Regarding Escherichia coli, there was also an absence of the microorganism. Thus, the samples were within the microbiological standards established by legislation (RDC nº 12/2001; RDC nº 331/2019; Normative Instruction nº 60/2019). The fact that the samples were microbiologically adequate does not allow us to affirm that the establishments (I, II and III) fully comply with the storage, infrastructure or good practice standards, since no sanitary inspection was carried out in these locations. Therefore, the results attest to the microbiological quality, but do not guarantee that all handling and conservation steps are being carried out. The evaluated samples showed conformity with the established legal standards.
