CONDEMNATION OF CARCASSES AT A SLAUGHTERHOUSE IN THE INTERIOR OF THE STATE OF RONDÔNIA

Inspection procedures are essential to identify the main problems related to the number of condemned carcasses in cattle slaughter. Integration between rural producers and meat processing plants is fundamental to improving meat quality and increasing carcass yield, resulting in better economic performance for the entire production chain. This study aims to identify the main reasons for carcass disposal in cattle slaughterhouses. To this end, an industrial unit located in the Zona da Mata region, in the interior of the state of Rondônia, will be selected, where information and slaughter reports provided by the company will be analyzed. Condemned carcasses in meat processing plants are relatively common and largely result from operational management failures. The adoption of employee training and development programs, combined with good handling and inspection practices, can significantly contribute to reducing losses, improving production efficiency and the final product quality.
