CAUSES OF CONDEMNATION OF CATTLE CARCASS AND ORGANS AND THEIR IMPACT ON PUBLIC HEALTH

This study aimed to analyze the main causes of condemnation of bovine carcasses and organs and their impacts on public health, seeking to understand the determining factors and propose mitigation strategies. The research, of a bibliographic nature, was based on the analysis of recent scientific articles and technical documents, focusing on the economic, social and health consequences associated with condemnations. The results showed that zoonotic diseases, such as tuberculosis, cysticercosis and brucellosis, in addition to inadequate management practices and sanitary failures, are the main factors for rejection of carcasses. These factors not only compromise food safety, but also cause significant economic losses to the agricultural sector. The study demonstrated that, despite advances in sanitary control programs in some regions, structural and operational gaps still represent challenges for the production chain. The need for integrated actions is highlighted, such as the expansion of public policies aimed at animal health, the training of professionals involved in production and the strengthening of inspection. Furthermore, the promotion of good management practices and the use of emerging technologies are essential to reduce condemnation rates and their negative impacts. It is concluded that reducing condemnation rates requires a multifaceted approach, involving coordinated efforts between producers, regulatory agents and consumers. This study contributes to the expansion of the debate and provides support for the formulation of more effective strategies, aiming at sustainability and food safety in the livestock sector.
