CAUSES OF CONDEMNATION IN POULTRY IN REFRIGERATORS – LITERATURE REVIEW

Brazil has immense potential in poultry production, standing out for the relevance of poultry farming as one of the most promising food industries both nationally and globally, valued for its high nutritional value, quality and low cost. However, the increase in causes of condemnation in slaughterhouses, such as microbiological contamination, injuries due to inappropriate handling, infectious diseases and metabolic problems, has generated a significant economic impact for several industries. Given this scenario, the present work proposes a bibliographical review to explore the various causes of condemnation of birds in slaughterhouses, such as aerosacculitis, cellulitis, cachexia, dermatosis, among others, seeking to analyze the main injuries that affect broiler chickens and understand the factors that contribute to these condemnations. Therefore, this study reinforces the importance of the measures necessary to correct these issues, essential to ensure the quality of the final product that reaches consumers.
