The egg is one of the most consumed and marketed foods in the world, as it is rich in proteins and several other nutrients. In addition, the egg contains vitamins and salts that help the body to function properly because it is rich in proteins, this food ends up being favorable to the growth of microorganisms and bacteria, one of the main pathogens linked to contamination of the egg is Salmonella spp. Salmonella spp is one of the main pathogens involved in contamination caused by food ingestion (DTAs), due to its ability to multiply these bacteria can cause salmonellosis. This work aims to investigate the quality of eggs sold at street markets in the city of Cacoal in the state of Rondônia, considering that this product is consumed daily by the population.
