Objective: To know the hygienic-sanitary conditions of the kitchens and if the sanitary safety of the food supplied to the students is adequate. Methodology: A qualitative and quantitative cross-sectional study was carried out to assess the hygienic-sanitary conditions of schools and the perception of handlers regarding knowledge about BP. Results and discussions: This study was divided into two categories, the first presents the hygienic-sanitary conditions of schools and the second about the knowledge of handlers about BP in the production of meals. In the general evaluation of the schools, the average adaptations in the schools of Palmitos were 58.88% and Maravilha, 66.86%, both classified in group II (BRASIL, 2002). Most of the non-conformities were related to buildings and installations and the absence of regulatory and guiding documents. The interviews demonstrated the lack of knowledge about BP and the need for greater guidance and supervision in the activities carried out by the cooks. Conclusion: The study reveals that many of the nonconformities are due to lack of training and guidance on correct handling and physical-structural structure. In this way, it is possible to point out that the promotion of safe food at a hygienic-sanitary level is related to the presence of a qualified professional to regulate, inspect, monitor and train food handlers.
