MAIN CAUSES OF CATTLE LIVER CONDEMNATION IN REFRIGERATED SLAUGHTERHOUSE IN THE MUNICIPALITY OF ARIPUANÃ-MT

The inspection of the carcass and organs in slaughterhouses aims to limit the use of products unfit for human consumption, protecting the population against diseases transmitted by these foods. The liver is a viscera with a high content of nutrients and well accepted by consumers, but its metabolic functions make it susceptible to several injuries, causing it to be frequently condemned in the inspection routine. In this work, the prevalence of the main causes of condemnation of bovine livers in a slaughterhouse under Municipal Inspection Service, located in the Midwest region of the municipality of Aripuanã-MT, was evaluated. To obtain data, the macroscopic lesions found in bovine livers at the time of post-mortem inspection, from August 9 to October 20, 2022, in that establishment were evaluated. During this period, 437 animals were slaughtered, 432 females and 5 males. The prevalence of liver condemnation was 10.75%. The main pathologies involved were telangiectasia, cirrhosis, abscesses and steatosis, responsible for 59.57%, 21.27%, 10.64% and 8.52% of convictions, respectively. It is concluded that the main pathologies responsible for the condemnation of bovine livers were telangiectasia, cirrhosis, steatosis and abscesses. These convictions generated financial losses of R$ 1.893,16 to the slaughterhouse.
