ADEQUACY OF THE PHYSICAL SPACE OF A SCHOOL UAN TO COMPLY WITH THE STANDARDS OF RDC N°. 216/2004

This study was carried out in a school food and nutrition unit located in the city of Salvador - BA, in order to verify the adequacy of the physical space in accordance with the standards of RDC nº 216/04 in order to identify potential safety hazards. food and consequently the health of the diners. A descriptive research with a quantitative approach was carried out on the hygienic-sanitary conditions of the kitchens of two private schools in Salvador - BA. An analysis of observation and application of a checklist was carried out, where 156 items were evaluated. As a result, in school A a total of 85.26% of items were found to be in conformity, 8.33% not compliant and 6.41% not applicable, and in school B a total of 85.90% were in conformity, 2.56% not compliant and 11.54% not applicable. It then concludes that the UAN does not follow part of the rules imposed by RDC 216/04, and it is necessary to adapt it so that notification by ANVISA does not occur, in addition to avoiding possible contamination of the food, making it unsafe for employees and students.
