SANITARY QUALITY OF UHT MILK IN BRAZIL: A REVIEW

Keeping milk safe for consumption avoids health risks. For this, the legislation defines parameters that ensure the sensorial quality and the physicochemical characteristics from the milk production. This context aims to emphasize the importance of technology aiming at the shelf life of UHT milk, as well as analyzing the sanitary quality of UHT milk in Brazil. The literary review supported the preparation of this study by using scientific articles, specific journals, books and other contexts available on electronic addresses. Having quality milk in Brazil is defined by the sum of requirements such as hygiene and sanitary safety.
