Vegetable oils are unsaturated fats, are liquid at room temperature and have benefits for cardiovascular health, as they act by increasing HDL levels. How will vegetable oils influence the reduction of heart disease rates? The problem is: the increasing rate of deaths associated with cardiovascular diseases. On the other hand, the consumption of healthier foods that reduce heart-related damage has increased significantly, so the adoption of a better lifestyle has been implemented with the aim of reducing the number of deaths from heart disease. Thus, the impacts of lipid consumption have been widely studied, with unsaturated fats playing the most important role in society, since their intake has a positive impact on health, with an increase in “HDL”, considered the “good” cholesterol because it acts as a carrier protein that carries with it the “bad” cholesterol (LDL), which, due to its structure, tends to be deposited in the veins and arteries, leading to diseases such as atherosclerosis. Furthermore, the consumption of unsaturated fats, mostly found in foods of plant origin, has shown significant results, reducing LDL levels and increasing HDL in the blood, playing a prophylactic role in the prevention of cardiac events. The objective of this study was to analyze the impact of vegetable oil consumption in the prevention of cardiovascular diseases, explore the cardioprotective effects of unsaturated fatty acids present in vegetable oils, establish guidelines and recommendations for vegetable oil supplementation, and investigate the relationship between lifestyle and the effectiveness of vegetable oils. This article used the observation of data from scientific articles, books and databases, especially from Google Scholar, as a study method, where relevant articles on the subject were identified and analyzed. Clinical trials were conducted, observing the interference of vegetable oils on glycemic levels through periodic collections. The methodology highlights the positive impact of vegetable oils on cardiovascular health, analyzing the effect on the LDL and HDL of participants. The research concludes that, despite the benefits, the effectiveness of supplementation depends on adherence to a healthy lifestyle.
