ASSESSMENT OF THE PHYSICAL-FUNCTIONAL PLANNING IN A INSTITUTIONAL FOOD AND NUTRITION UNIT OF SALVADOR-BA: A CROSS SECTIONAL STUDY

This article aims to discuss the physical-functional structure of a UAN placed in the city of Salvador, Bahia, using the items in attachment II of the Regulation RDC nº 275, of October 21, 2002, in order to evaluate the items on buildings, installations and production’s stream. Calculations were made for the recommended size of the unit’s areas, in order to compare with the real-dimension areas. Nonconformities were observed at items regarding external areas, general access, insects and vector controls, ventilation systems, doors and windows systems, hygienization and layout (40.5% of items) and conformities at items regarding sanitary installations, walls, lighting system, water supply and sanitation (59.4% of items). There was a subdimension of the areas described as meal’s distribution location, administration’s area and hygiene and cleaning area. Possible interventions and suggestions were reported in an official document, to be received by the Unit’s nutritionist-supervisor.Downloads
