Considering the importance of the food borne diseases, food safety has become a constant concern for consumers who, by changing their behaviour, promoted the development of new packaging systems. Therefore, this study aimed to conduct a literature review on innovations in packaging technology of food of animal origin, highlighting the emerging tecnnologies most used as smart and active packaging systems. Systematized searches of information were carried out in traditional databases with the support of descriptors relevant to the topic, and then publications were selected for reading, discussion and synthesis of information. Traditional food packaging was developed in order to ensure protection, however, technological advances have enable the development of packaging with additional features and, in this context, smart and active packaging are included. They are capable of interacting with food, providing information about your quality and safety. Although their strongly contribution to food safety, some of these tools are not economically viable yet, what makes it difficult to their large-scale introduction in the food industry. The development of smart and active packaging systems is an emerging field focused on food safety and due to its ability to monitor food conditions throughtout the supply chain, it has become a necessary tool for the guarantee of food’s quality and safety.
