MICROBIOLOGICAL ANALYSES AND DOMESTIC PRESERVATION TIME OF PORK SOLD IN THE MUNICIPALITY OF CACOAL – RONDÔNIA

Pork is the most consumed protein source in the world, and Brazil is currently in 4th place in the world ranking of production and export. However, it is known that swine breeding is not restricted to highly technological farms, and that, mainly in the North and Northeast regions, breeding is carried out mostly by small producers, with the objective of family subsistence. In this sense, the main objective of the present work was to carry out microbiological analyzes of pork meat sold in various parts of the municipality of Cacoal - Rondônia to measure the microbiological quality. Through the counting of total coliforms and Aerobic Mesophilic Bacteria, which indicates failure in hygiene and poor handling conditions of the product, contamination of utensils and equipment, inadequate conservation of products, putting the health of the consumer at risk. The experiment was carried out together in this work proposal to measure the shelf life of the pieces, evaluating whether the meat sold in natura met the hygienic-sanitary quality standard recommended by Brazilian legislation. Through the results obtained in this study, it was possible to verify that 9 samples (90%) were below 106 CFU/g for mesophilic aerobics. In this way, the presence of mesophilic bacteria was evaluated, it was observed that 07 samples (70%) have values of 105 CFU/g, 02 samples (20%) have values of 104 CFU/g and 01 sample (10% ) has values of 106 CFU/g, indicating contamination. And the results found for Total Coliforms ranged from 2.5x 102 to 9.4 x 102 NMP/g, minimum and maximum respectively. It is known that high numbers of these microorganisms contribute to the early deterioration of food, and still put the health of the consumer at risk.
